Butternut and Sweet Potato Soup
RECIPE FROM THE FOX
300ml chopped peeled butternut
300ml chopped peeled sweet potato
1 onion chopped
250 ml Vegetable Stock
1 teaspoon curry powder (to taste)
– Saute the onions in butter until soft
– Add the butternut, sweet potato and curry powder, sweat for about 1 minute.
– Add the Veggie stock and the milk.
– Simmer until soft.
– Blitz until smooth with a stick blender.
